Going Bananas French Toast {Brought To You By FullPlateLiving}

Our family loves to make French Toast, especially on Saturday mornings. This is usually the only day that our family takes the time to spend the whole day together, which really means no interruptions allowed from the outside influences. For example; no friends are allowed over that day unless Mom or Dad have planned something in advance that calls for them to be there-usually for a few game night or movie nights.

I try to make weekends as uncomplicated as possible, it is the only time hubby is home from work, to spend quality time with the kids. Having an easy Saturday morning breakfast planned as it sets the mood for the rest of the day. I came across this recipe that I would like to incorporate into our arsenal of breakfast treats. The bonus is that it is a much healthier version for the family, but just as simple to make.

Yields 8 Servings


Ingredients

2 medium bananas sliced
3/4 cup vanilla soy milk
1 teaspoon cinnamon (ground)
8 slices whole wheat bread
vegetable oil spray



Directions

Place the bananas, soy milk, and cinnamon in a blender or food processor and blend until smooth. Pour the mixture into a pie plate. Dip each slice of bread into the mixture, making sure it absorbs the liquid well. Cook each slice on a hot griddle which has been misted with cooking spray. Cook over medium high heat until browned, and then flip to brown on the other side. Serve immediately, accompanied by your favorite fruit topping. 

I think this easily could be multiplied to make more servings, we most definitely would not be able to serve only 8 Servings. I hope to try this out and give any updated information for larger families.
