Sausage and Egg Breakfast Cups



All you will need is biscuits, eggs, cheese, and some Jimmy Dean Pork Sausage Crumbles to make this simple and delicious breakfast your family will love.


Ingredients

1 cup Jimmy Dean® Hearty Pork Sausage Crumbles

3 eggs, beaten

1 pkg. (7.5 ounces) refrigerated biscuits (10 count)

1/2 cup (2 ounces) shredded cheddar cheese



Directions

Preheat oven to 350°F. Cook and stir sausage and eggs in a large skillet over medium heat until eggs are scrambled and set.



Flatten each biscuit and place into a greased muffin tin covering bottom and sides forming a cup.


Spoon sausage and egg mixture evenly into cups. Sprinkle with cheese.
Bake for 15 minutes or until edges of biscuit are golden brown. Serve immediately.

Prep Time: 15 minutes
Cook Time: 15 minutes


Yield: 10 servings (1 cup each)

Kid Created~ Sausage, Potato, & Corn Leftover Bake {Smothered In Cheese!}



The kids got together and created tonight's meal from leftovers in the fridge. The last few days I have shoved various leftovers into the fridge, hoping that someone would get the munchies and rid me of them.

Instead the kids wanted to make dinner, really who am I to argue with that? I told them that I had been shown a recipe for Sloppy Grilled Cheese Sandwiches from Cupboard Concoctions Blog {even mentioned to the author that I would have the kids make it tonight}. The older kids insisted on clearing out the fridge, probably had something to do with the huge fit I had the other day about wasting food. Nice to know they were actually listening.

Anyhow, the recipe is really simple. They took left-over fried potatoes, left-over corn, and 2 packages{not left-over} Mild Italian Sausage Links/Brats. The sausage links were cut up into large chunks, quickly cooked in a fry pan and added to the mixture. 

As I watched them  transfer it all into a casserole dish, I remember thinking "This is going to be the driest meal we have had in a long time". But I kept silent and watched them all work together, more like shocked they were all working together. The older kids even had my 2 year old helping out by letting him spoon into the casserole dish.




Around 30-35 minutes later, I watched in awe as the dish was taken out of the oven- they then added around 2 bags of shredded cheese on top. I think they used 1 bag of Mozzarella and 1 bag of Mozzarella & Cheddar. They plopped it back in the oven for another 5 minutes, in the meantime they set the table and sliced up some bread to serve with it.

I must say, it was not dry at all...and it was really quite good. I was impressed at the fact that all 9 of us were able to eat, all bellies full, and leftovers were no longer in my fridge.

Going Bananas For A Few Recipes!

Best Yankee Chiquita Banana Split Recipe

Prep Time:10 minutes
Total Time: 10 minutes
Servings:4

Ingredients:

4 whole Chiquita Bananas, sliced in half lengthwise
1 cup Strawberry ice cream
1 cup Chocolate ice cream
1 cup Vanilla ice cream
1 cup Sliced strawberries
1 cup Blueberries
1/2 cup Hot fudge or chocolate sauce
4 oz. Sweetened whipped cream
4 Maraschino cherries, with stems

Instructions 

Place banana halves along the long sides of oval ice cream dishes. Using a 1/4-cup ice cream scooper, add 1 scoop of each ice cream in a row between the bananas, with the chocolate in the middle. 


Pour 2 Tbsp. of hot fudge sauce along the sides of each dish, allowing some to drizzle over the bananas. Top the strawberry ice cream with the strawberries and the vanilla ice cream with blueberries. 


Top the chocolate ice cream with the whipped cream and garnish each sundae with a cherry.


Serving Suggestions: For round ice cream dishes slice the bananas in half again crosswise and place around the edges of the dish.



Easy Cream Cheese Chiquita Banana Turnovers Recipe

Prep Time:15 minutes
Total Time: 35 minutes

Cook Time: 20 minutes
Servings:18


Flaky, scrumptious and easy-to-make, these banana and cream cheese turnovers make a great dessert or breakfast treat.

Ingredients:

1 (9-sheet, 5-inch x 5-inch) package frozen Puff pastry dough squares
2/3 cup Cream cheese, softened
1/2 cup Brown sugar or granulated sugar*
2 ripe Chiquita Bananas, diced
2 large Egg yolks, beaten

Instructions 

Preheat oven to 400 degrees F. Remove dough from freezer and let soften slightly, just enough that you can fold the dough without breaking it. 

Combine softened cream cheese and brown sugar until well blended; set aside. Dice the bananas. 

Working with 1 pastry dough square at a time, slice the square diagonally into two triangles. In the center of each triangle place about 1 teaspoon of the cream cheese mixture and top with about 1 teaspoon of diced banana. 

Do not overfill or the filling may leak out during baking. Fold dough triangles in half over the filling. With a fork or your fingers, crimp the edges of the dough tightly together, then place on baking pans lined with a baking sheet or non-stick foil. Keep remaining dough squares covered in the refrigerator until ready to use; repeat filling and folding the turnover triangles. (You may have a little extra banana; enjoy a snack while the turnovers bake!) 

With a pastry brush, brush the tops of the turnovers with the egg yolk. Bake for 20 minutes or until puffed and golden brown. Remove to a baking rack and cool until cool enough to handle; serve warm.

*Note: brown sugar gives a slightly caramel flavor to the turnover.

Serving Suggestions:
Dust lightly with powdered sugared before serving, if desired.

Variation:
sprinkle cinnamon or your favorite baking spice in the cream cheese mixture.


Easy Chiquita Banana Halloween Chocolate Spider Web Cake Recipe

Nobody will say Boo to this frighteningly delicious chocolate, banana and peanut butter cake. Why wait till Halloween? With just 6 ingredients and about 20 minutes of time, you’ll have a festive Banana Halloween Chocolate Spider Web Cake ready to impress.

Ingredients:

6 Chiquita Bananas, yellow with brown flecks, cut in 3 to 4 sections
1 (24 oz.) package semi-sweet chocolate morsels
1 1/2 cups Butter
1 1/2 cups creamy Peanut butter
1 cup Powdered sugar
5 cups Toasted rice cereal

Instructions 

Create a double boiler by using a saucepan with one inch of water over medium heat and covering with stainless steel bowl. In bowl place chocolate and butter, and let sit until chocolate starts melting. 

Add bananas, powdered sugar, 1 cup peanut butter, and whisk until mixture thickens. Place 3/4 of chocolate mixture over rice cereal and stir. Place plastic wrap in 8 to 10 inch pan and place rice mixture in pan. Use your hands to spread crispy mixture evenly, then let it sit for ten minutes to harden. 

 Place plate over pan and turn rice cake onto the plate. Top with the rest of the chocolate mixture, smooth it out with a knife or spatula, and let cool for ten minutes or until chocolate is cooled. 

 Put 1/2 cup peanut butter into pastry bag or plastic freezer bag and form peanut butter so it is in one corner of the bag. Cut the tip of the bag and pipe circles around your cake, then pipe lines to make the cross web. Let stand at room temperature until it's time to serve.


Cheerios Frozen Banana Pops

Ingredients

2 large bananas, cut into two inch slices
1 (6 ounce) container Yoplait yogurt (any flavor)
1 cup Cheerios cereal
1/4 cup rainbow sprinkles
whipped cream for garnish
lollipop sticks or straws

Directions

Start by sticking your lollipop sticks or straws through the center of each banana, not quite to the very top. Place banana pops on a cookie sheet or tray and freeze for about 30 minutes.

Once the bananas are frozen, open the top of the yogurt container and dip the banana pop in the yogurt making sure it is coated on all sides.

On the bottom of the pop, place Cheerios in a row. Make another row of Cheerios about 1/2 inch above the bottom row. Gently shake the sprinkles in the gap between the two rows of Cheerios and on the top of the banana pop.
Place on a cookie sheet and freeze until yogurt is hard. Serve with a dollop of whipped cream and more sprinkles.


My Daughter Cooked & Beautiful Skies

My daughter decided to cook tonight, this is both exciting and scary. She prepared a "concoction", I am not kidding this is what she called it. My daughter did not have a plan of what she was going to make, she only knew we had a bunch of chicken breast leftover and she was going to use it up.


My daughter is not an experienced cook, so she does keep it simple. She is getting so much better in the kitchen each time she is able to cook. My daughter thought that she could use up the Kraft Cooking Creme that I had in the freezer to make her dish. I bought a whole bunch of it when it first came out, but had a hard time using up our last three containers.

She cut up the chicken, and mixed in the cooking creme. I explained that it would be wise to thin out the cooking creme because in the past it was very thick and not very creamy. She chose to take my advise and also added frozen peas to the mixture.

Then she made a huge pot of white rice and a huge pot of noodles, she wanted to use them as the base for the mixture. Unfortunately, in our family half of them love rice and hate noodles, the other half loves noodles and hates rice. My daughter and I love both!

She added some garlic cheese bread as the side, and dinner was served! Let me mention IT TASTES BETTER THAN IT LOOKS!!!!

Then we looked out the window and saw the most AMAZING sky! The pictures DO NOT do the color justice. It was a brilliant Red-Orange. I have never seen the sky that color before.

I wanted to post about this resource before it was gone. While the book itself is in public domain and can be downloaded in PDF form at ManyBooks or Internet Archive- matching free resources may not be available.

I am going to be using these when we continue on through our Nature Study, these resources will be very valuable teaching instruments.

Nature Walk (Part Two)

 Cheeky is love, love, loving the FREEDOM to explore!


 Here "Cheeky" is finding out that if you pull on a leaf, it will come off. He does try to put it back afterwards, LOL.

 Here my daughter is doing some entries into her nature journal. She has given me permission to take some pictures of it, but only after she makes it "perfect". I can't wait to show you some of what she has done in a later post.
 A very unusual mushroom we found at the bottom of a rotting tree trunk.


 The above two pictures are from a junk yard we stumbled upon.  I was not so prepared to see this on our trip. 






Cheeky found out that those big sticker bushes do actually stick. If you look closely you will see one dangling from his hand. It was stuck to his finger and he was trying to shake it off. Then mom had to come to the rescue to get rid of the "Big Bad Burr"

 A green bug that I was told I HAD to take pictures of.











 All the above pictures were taken while we stopped for a rest. I think I will cherish these most of all.


 I think this used to be for cattle, now it lies in hiding of the trees.


This was a rotting tree that was FULL of black ants. Although they didn't end up in this picture,they were feverishly scurring about.
